Tomato and Carrot Rice

This rice is easy to cook, look good, tastes great and filled with goodness of vegetable. It also give a very nice colour to your rice therefore you can cook it for Chinese New Year or any good function.

Ingredient:

1 cup Carrot Juice
2 Tomatoes (cut it into small pieces)
1 ½ cups Uncooked Rice
2 cups Water
1 tsp Chicken Stock
A bit of butter for cooking

Method:



1) Use low fire to melt the butter, put in the garlie and tomato. Fry it for 1 minute.



2) Put in the rice and chicken stock. Mixed it well



3) Pour in carrot juice. Leave it to boil




4) Off fire and transfer everything to rice cooker



5) Pour in water

6) Now cook it as though you are cooking normal rice

You may put some fried chicken into the rice when it is cooked.




I like to eat it with salted fish. My son likes to eat it with some raisin.
